The last time I cut my hair was 6 months ago and I loved every minute of it. Till it grew to my shoulders and not even my powerful blow dryer could fix the banshee look.

This afternoon (which, not coincidentally is the 1st day I got my car back after the boyfriend spent weeks using mine because he was fiddling with his own car) I went back to the same stylist, Alvin to get my hair done.

I love Alvin, I trust him with all my heart and soul. He gave me the same cut albeit with a slight change at the back to allow it to grow out more evenly.

I honestly don’t know what colour, because I left the decision to Alvin. I’m guessing it’s hurm, chocolate?

You know, the recent fake water cut has really messed up my cooking mojo. So I’m taking the break as an opportunity to give the kitchen a bit of a thorough cleaning before stocking in fresh groceries. Hopefully cooking posts shall commence soon!!!

My 2 favourite blogs of June 2011.

Today, I’ve made a decision to share the blogs that I enjoy reading, at least once a month. Reading these blogs make me happy and I hope they’ll make you happy too :D

Being a cooking enthusiast, there’s no doubt you’ll be seeing a lot of food/cooking blogs but hey, I have other interests too so you’ll see some variety in my blog reading list, I promise!

Without further ado, here are the reasons why I enjoy the two blogs below. Happy surfing!

First up…Chapter V.

This is one of my favourite cooking blogs, and written by a local girl no less. The description of herself on the website reads, “SAHW(stay@home wife) | mom to a furkid | avid culinarian | introvert by choice | serial grocery shopper”.

I believe I have found a kindred spirit! :)

Her food always look immaculate and I wish I could replicate some of the stuff she does! I mean she made her own fish fingers! By the time I finished reading about her homemade fish fingers, I was thoroughly consumed by both joy and jealousy.

Joy over her generosity in sharing the recipe and jealousy in knowing I could probably not make such beautiful fish fingers.

What’s more, she grows her own fresh herbs too! I am humbled!

I’m pretty sure right after the BF has seen her blog, he would insist I attempt to make some fish fingers for his childhood favourite, the fish finger sandwich (yes, there is such food!). Thanks for making all these delicious food, whytevee (this is not your name, right?)!

I’ve actually met Heather once, at an event which she managed. There, she revealed she’d be leaving Malaysia for Shanghai and I haven’t seen or heard from her since.

Fast forward a couple of years later, I stumbled upon the blog of this gorgeous Malaysian lady who lives in Luxembourg with her sexy chef of a husband.

She’s always optimistic and even when she’s down, she somehow find ways to see things positively. It’s always such a treat to read about her life. Plus, I love her style! I want to steal all her clothes!!!

I read her blog religiously but I never put two and two together, until she posted up an old picture of herself holding a totebag with the logo of the brand she was managing back in Malaysia! I was like, OMG it’s HEATHER! WTF??

It was weird to realise that the stranger I’d been reading about all this while was not really a stranger afterall. Weird, but a good weird :)

Individual mango chocolate pavlova recipe.

When LSA was back in town recently, we got her to pop over for some homemade dinner. I made this as a dessert because:

1. It’s simple to whip up the meringue and just let it bake for 2 hours while I continue with the rest of the cooking.
2. Chocolate pavlovas are possibly one of my favourite things in the world.

I realise I should have made something that LSA personally likes, but I guess I’m just pushy like that….

# – Individual mango chocolate pavlova.

Anyway, while I was busy setting out the table and all, LSA asked me, “Kim, can I check with you what is your policy about centipedes?”

“Huh?”

“If you’re looking at one, would you leave it alive or would you kill it?”

“Huh?”

And less than a second after I responded, a centipede crawled really fast into Charlie’s pen right before my eyes. WHAT THE EFFFFF???

Long story short, LSA helped me killed it by courageously squashing it to death with some paper towels while I held on to a chair ready to jump on it lest it crawled towards my direction.

LSA, I <3 you, hahahahahhaha. For the pavlova:

  • 4 eggwhites
  • 200 grams of caster sugar
  • 4 teaspoons of cornflour
  • 1 teaspoon of lemon juice or vinegar
  • 3 tablespoons of cocoa powder

For the filling:

  • 300 ml of whipping cream, whipped up
  • 2 mangoes, peeled and cut into cubes

# – First, in a clean and greaseless bowl, beat the egg whites.

# – When the egg whites have doubled in size, gradually pour in the caster sugar and continue beating.

# – When the egg whites have turned glossy, add in the lemon juice. Lower the beating speed.

# – While slowly beating, add the cornflour.

# – And lastly, the cocoa powder. When the mixture has turned an even chocolate colour, stop the beaters.

# – Stick the mixture in a piping bag and pipe out 6 bird’s nest designs on a non-stick baking sheet. If you don’t have a piping bag, just spoon the mixture over and aim for a pretty rustic look ;)

# – Stick it in a preheated oven at 130 degrees celcius and bake for 2 whole hours. This is how they looked like after baking. My tray was too small so I couldn’t pipe out 6 nests properly, so I just piped out small chocolate meringues all around with the leftover :D

# – Put a few dollops of cream over the next and sprinkle with fresh mango cubes. Individual mango chocolate pavlova, DONE!

# – Chocolatey, crispy on the outside and chewy in the middle. It went down absolutely well with cream and juicy mangoes.

A dessert like this cost would probably cost like a minimum of RM12 outside for ONE serving. I could make 6 servings for under RM10! It is quite ridiculous isn’t it? To think that the effort involved also wasn’t that much really.
